Rivendell Bees - Soft Set (Creamed) Honey
All honey starts life runny, but all will eventually crystallise and set.
It's still fine to eat, but can be crunchy to the palate, and sometimes becomes difficult to remove from the jar.
The type of flowers that the bees have visited for nectar will affect how quick this happens, and can vary from as quickly as 24 hours, like oil seed rape, while others would take longer to set, such as borage.
The higher the glucose content of the nectar, the faster the honey will set.
Our set (creamed) honey has a mild, light taste, and spreads like soft butter. It is perfect on warm toast for breakfast, delightful on croissants and crumpets, and a honey sandwich will hit the spot!
