Echium Honey - 226g/half - pound jar
Also known as Viper Bugloss, a relation of borage, Echium honey is very light, with a pale golden hue.
The taste is very clean with a floral, almost lemon like, afternote.
This honey is slow to granulate, and goes well with strong cheeses.
Our bees were located near several fields of Echium, (grown either as a break crop, or for the oil obtained from the seeds), and they certainly made the most of it!
We house all of our hives in the Daventry area, and our bees forage for nectar and pollen within 3 miles of their colony, so local means local!
We only take honey from our strongest colonies, as seasonal weather changes can leave the bees unable to forage and lay down more honey.
If we do have enough honey to harvest, we spin the gorgeous golden liquid by hand straight from the comb, whilst it is still warm; gently run it through a coarse grade sieve; let it settle overnight and then jar it up - ready for you!
Our simple, focused and time dedicated approach to extraction means that none of the goodness is lost, and there is little damage to our bees, comb or honey.
